E-mail: rejaneluna@gmail.com The coalho cheese is a traditional product in Northeastern Brazil. The artisanal production favors microbial contamination. Contamination by bacteria Aeromonas may occur in obtaining milk or during processing, if not observed safety procedures such as pasteurization or proper use of good quality water in cleaning equipment. Aimed to detect Aeromonas in coalho cheese type A marketed in Recife city in northeastern Brazil, in the summer (summer period) and winter (rainy season), with identification of isolated species and resistance testing of isolates against antibiotics. There was no difference between the frequency of isolation of Aeromonas in both periods. Were isolated A. hydrophila (54.8%), A. caviae (24.7%) and A. sobria (17.8%), species often incriminated as causing acute diarrhea and to a lesser extent, A. veronii (2.7%). All Aeromonas isolates showed multiple resistance to antibiotics and were resistant to at least three of the eight antibiotics tested. Coalho cheese type A may present a risk to consumers contain Aeromonas bacteria at high frequency, which are resistant to several antibiotics of choice in outbreaks of gastroenteritis.
