E-mail: kelly.keller@yahoo.com.br Two hundred of Apis mellifera honey samples were grouped according to the presence of inspection seal, in order to assess their quality and to determine the physicochemical characteristics as indicators of honey quality (5-hydroxymethylfurfural-HMF, moisture and acidity). The honey samples were purchased in the state of Rio de Janeiro over two years. The samples acquired were majorly untagged, and most honey samples were in conformity with the Brazilian Legislation. It is noteworthy that the determination of free acidity out of the limits of the honey criteria comprised 14% of samples, and especially covered the samples without seal. The resulted of HMF showed wide variation, the majority of samples fulfill the limits authorized by legislation, and the smaller values came from the samples with seal. The honey label in accordance with health and safety legislation, which has the seal, proves to be crucial for quality assurance. No less important is to maintain surveillance in the beekeeping in order to reduce the informal products in the market.</p> ER -
